Buck High Beef Prices With Venison!

With the price of beef so high, we've been searching for palatable alternatives, including game meat. 
Deer are abundant in our area, and many hunters are willing to share from their bounty.  Additionally, venison is nearly six times leaner than beef and is lower in saturated fat.

We've been substituting venison in many of our favorite recipes, and have found that, for us, it adapts well in highly seasoned dishes like chili and soup.  This weekend, we're adapting a family favorite, spaghetti.

Pomodoro Sugo di Cervo
with Wiederkehr Chardonnay
2# ground venison
1# ground venison sausage
1 T. grapeseed oil
1 t. salt
1/2 t. black pepper
1/2 large onion, finely chopped
2 t. crushed garlic
2 T. dried parsley
1 t. dried basil
2 t. dried oregano
pinch dried thyme
3 bay leaves
1 c. Wiederkehr Chardonnay
3 large cans crushed tomatoes
1 large can tomato sauce


Brown meat in dutch oven prepared with grapeseed oil and salt.  When meat is done, remove from pan to drain.  In same pan, saute onions until golden brown.   Add garlic, parsley, oregano, thyme, and bay leaves and saute for about 1 minute to release flavor.  Add tomatoes and wine, simmering for about 30-45 minutes.  If using sauce for spaghetti, add the meat and simmer for about 10 minutes more.  Serve over cooked pasta.  Makes a dutch oven full!
