Easy Tortilla Soup

Mix ingredients together in a soup pot.
The days are growing shorter and the evenings cooler, which means that soup season is near. Making soup from scratch can mean a long evening of slicing and chopping.  If you don't have time for that, reach into your pantry for ingredients to make this easy weeknight soup that will make your family cheer!



2 28 oz. cans crushed tomatoes
2 cans Rotel with lime and cilantro
1 15 oz. can black beans
1 15 oz. can dark red kidney beans
1 16 oz. bag frozen sweet corn
1 7 oz. can green chiles
1 package taco seasoning
1 package Ranch dip mix
1 pound summer sausage, sliced and halved

A yummy autumn supper!
Mix all together in a slow cooker or soup pot.  Simmer until bubbly and sausage is done.  Serve with your favorite Mexican side items like guacamole, tortilla chips, sour cream, and shredded cheese.
